SMOKED TROUT SALAD
Knowing to make the most of your pantry is really the key for success in the kitchen when you are low on time and/or energy. Make this satisfying salad full of fresh herbs and lemony flavor and you will be surprised at yourself at what is possible to make with tinned fish.
2 smoked trout tins (110g each), drained *
1 big bunch of parsley, finely chopped
1 bunch of scallions
2 tablespoon olive oil
2 tablespoon Preserved Lemon Paste

Mix the trout, with the parsley and scallions and add olive oil and preserved lemon to taste.
Start with adding 2 tablespoon of olive oil and 2 tablespoon of preserved lemon paste. Add more as you see fit for the salad to come together. (Good indication of the right amount is when your taste buds pucker up from the citrus and saltiness of the preserved lemon paste, in a good way.)
Serve with hard boiled egg, sprinkled with Rosey/Herby/Fiery harissa spice and fresh bread for a complete meal.

* I have been stocking up on this smoked trout from Trader Joe’s as if it's going out of fashion. At times when pantry dinners are on frequent rotation, the flavor of this trout feels the least ‘out of a can’ for me. Trout alternatives: smoked white fish, hot smoked salmon, any other canned fish you prefer; tuna fish, mackerel and sardines. For non fish alternatives any preferred canned beans would work.
**Optional add ins: finely chopped fresh red bell pepper/chopped tomato/sun dried tomato slivers/ olives/capers/marinated artichokes.
