Sunrise Ruby- Preserved Lemons & Grapefruit Cocktail

I would suggest you make the rosemary and preserved lemon simple syrup in advance so you can whip this super refreshing, simple & bright cocktail on a whim.

Makes 1 serving
Combine the following in a shaker with ice:
INGREDIENTS:
1 jigger (2 tablespoons) tequila silver
1/2 jigger (1.5 tablespoons) rosemary and preserved lemon simple syrup*
1/2 jigger (1.5 tablespoons) lime juice
3 jiggers (9 tablespoons) grapefruit juice
Top off with club soda and serve over ice
Garnish Options: lime/grapefruit peel, rosemary sprig
Replacement Options: replace tequila with mezcal for a smokey flavor
*Rosemary and Preserved Lemon Paste simple syrup:
1/2 cup sugar
1/2 cup water
5 rosemary sprigs
1.5 teaspoons Preserved Lemon Paste**
Bring to boil over medium heat. Stir continuously. Remove from heat, strain out rosemary sprigs and pour into storage jar. Store in fridge for up to one week.
*Our Preserved Lemon Paste is an all-natural product and is therefore subject to slight variations due to the amount of natural pectin in each batch. We recommend that customers who receive Preserved Lemon Paste with a more gel-like texture either blitz their desired amount in a blender or use a knife to gently run through the product on a cutting board until it reaches their desired texture
