ROASTED EGGPLANT IN MATBUCHA
If you love eggplant, you must try this! and if you don't, you also must try it as this might just be the dish that will convert you into an eggplant lover. Perfect as a Side dish, or make with it this showstopper of a salad.
Serves 4-6
4 long Japanese eggplant, peeled and cut into half
1 (10-ounce) jar Signature Matbucha or Matbucha with Olives & Mint
Olive oil
Salt
Preheat the oven to 400f.
On a baking sheet, place the eggplants.
Season with salt and drizzle oil on both sides of the eggplant.
Roast the eggplant for 20-30 minutes, until they are golden.
In a pan place the matbucha and on top of that layer the eggplants. Get the sauce to a boil and once boiled, gently simmer for approximately 15-20minutes. Spoon some of the sauce on the eggplant throughout the cooking process. Perfect either warm or at room temperature with a side of bread to soak up the sauce.
