Lentil Soup
Lazy cold days require a pot of lentil soup on the stove.
Sliced bread or a bowl of rice and you have the perfect meal.
Ingredients:
4 cups water
1 cup orange lentils, rinsed
1 Onion, diced
1 Carrots, diced
2 Celery sticks, diced
3 garlic clove, minced
1 tablespoon Signature Harissa
3 tbsp. Herby Harissa Spice (you can substitute Rosey Harissa Spice or Fiery Harissa Spice)
salt to taste
In a shallow pan, add the oil and set over medium heat. Add the onions, carrots, and celery, cook until onions are translucent. Add the garlic, harissa, salt and cook for another minute - set aside. In a soup pot add the lentils and water and set the heat to medium. Cook for 20 minutes and remove the foam that rises to the top throughout the process. Add the sautéed vegetables to the pot and bring to a boil, lower the heat and cook until the lentils are very tender - approximately 45 minutes. Check the soup throughout the process and add more water if necessary.
Garnish with chopped cilantro/parsley and a sprinkle of the harissa spice.
