Herby Harissa Roasted Chicken, Potatoes & Tomatoes

You know you have the perfect recipe when you are embarrassed to even call this thing a recipe because it’s so damn easy to whip up.

These dinners have been a lifesaver around our house. When reality strikes and you don’t have time for practically anything…this roasted chicken always comes in handy.

I always have some chicken in the freezer and potatoes, onions, and garlic on the counter. With those staples around you can’t go wrong. Add tomatoes for that extra juicy factor and the herby harissa to kick it up a notch on the flavor front. Not too spicy, yet, just the right amount of heat to keep your taste buds happy (and coming back for more!)

Recipe for Herby Harissa Roasted Chicken

INGREDIENTS:
1.5lb small potatoes, washed
2 onions, peeled and cut into wedges
Handful of medium size tomatoes, cut in half. (if you are using regular size tomatoes chop them into quarters, cherry tomatoes leave whole)
10 garlic cloves
2lb chicken (mix of drumsticks and chicken thigh, with bone and skin)
8 tablespoon of Herby Harissa Spice (you can substitute Rosey Harissa Spice or Fiery Harissa Spice)
2 tablespoon olive oil
1 teaspoon of salt


Preheat the oven to 450f. Mix all ingredients together and roast for 75-90 minutes. The chicken should be perfectly golden and fall of the bone when you try to break it up.


Note:

You have some carrots laying around that you want to make the most of? Chop them and throw them in. Green onion? Sure! This is your chance to basically clean out your fridge. You’re welcome.
