HAWAIJ BRAISED CABBAGE
We are all about family recipes that are celebrating our rich heritage. While they are delicious, they tend to be more complicated to make. Sometimes we need to keep it simple, straightforward and delicious all under a 5 minute prep time.
Made from 2 main ingredients; the humble cabbage and the fragrant hawaij spice, goes well with any meal, available all year around and is healthy- what else do we need in a dish?
Hawaij Braised Cabbage
Serves 3-4 (depending on the size of the cabbage)
Prep time: 5 min
Cook time: 60-90 min
Ingredients:
1 cabbage cut to 4 wedges
4 tbsp olive oil
1 tbsp sea salt
2 tbsp Hawaij Spice
water
Place cabbage in a pan (the smallest you can fit it in, you want the cabbage to be snugged in). Spread the salt, Hawaij and olive oil evenly on all 4 quarters of cabbage. Add approx 10 cups of water to cover the cabbage.
Bring to a boil and cook on medium-high heat for 1 hour and 15 minutes or until cabbage is soft enough to poke all the way through with a sharp knife.
Make sure to always have at least 1 cup of water in the pot for as long as you cook it to make sure it won’t burn.
At the end, you can simmer down the rest of the liquid and use it when serving.
Herby Salsa:
1 Garlic clove, chopped
2 tbsp Preserved Lemon Paste (or to taste)
½ cup olive oil
1/2 bunch of parsley, chopped (add any other herbs you have on hand- scallions, dill, basil would all work beautifully)
In a mixing bowl, mix all the ingredients.
On a serving plate, place the herb salsa and top with the cabbage wedge.
