Za’atar Halloumi over Matbucha

 
Hot salty cheese with that perfect golden sear, the herby flavors of za’atar, and the deep tomato flavors of the matbucha are a combo you don’t want to miss out on. The halloumi keeps well in the fridge so I like to keep a pack in the back of the fridge so we can make this super quick and impressive appetizer when friends come over or just feel like treating ourself for a light yet impressive dinner with some soft boiled eggs on the side.

Serves 4 as an appetizer

1 (8-ounce) package halloumi cheese, cut into ½ inch slices
1 (10-ounce) jar Signature Matbucha or Matbucha with Olives & Mint
Olive oil
Za’atar 

Dry the halloumi cheese slices with a paper towel. 
Heat a nonstick frying pan over high heat. Drizzle 2 tablespoons of oil into the pan, add the cheese and sear it until each slice develops a nice deep brown crust, about 1-2 minute on each side.

Depending on how strong of a zaatar flavor you prefer, either place the za’atar in a shallow bowl and roll the cheese in the za’atar from all sides or just sprinkle the za’atar on top of the cheese.

In a serving plate, place the matbucha, top with the zaatar halloumi and finish by drizzling olive oil. Serve with fresh bread
