CHOCOLATE ‘SALAMI’

This quick, no-bake dessert is fun to make with kids or when in the heat of summer you crave something sweet but don’t feel like cranking up your oven. The spices complement the chocolate and give it a fancy upgrade. Serve with a digestif for the perfect after dinner treat.

250g petit beurre (I like using this, this or this brand, but any simple supermarket butter cookie brand will work here)

250g/ 8.8oz semi sweet chocolate chips

1 teaspoon Kafe Hawaij or Ras El Hanout

¾ cup heavy cream

50g (4 tablespoons) room temperature butter, cut into small cubes

½ cup peeled pistachio- optional

powdered sugar, for serving

  • Place biscuits in a bowl and crush them using your hands until you have small and coarse crumbs. Add the pistachios to the bowl.

  • Place the chocolate in a medium bowl. Heat the cream in the microwave or in a small saucepan. Once it reaches a soft boil- add to the chocolate and mix until melted and smooth. Add butter and stir until you get a homogeneous mixture. Add the spice to the choclate and add the chocolate mixture to the cookie crumb mixture - mix until combined.

  • Divide the mixture to two and spread out on a plastic wrap and shape it tightly into a 2 logs. Place in the fridge for several hours until firm.

  • After chilling, when ready to serve, remove the log from the plastic wrap and dust lightly with powdered sugar around all sides. Slice and serve!
