Kafe Hawaij Apple Muffins
Easy, no fuss apple muffins that work so well with our Kafe Hawaij. Great way to use up the apples that you may have laying around. The perfect bite might just be when you bite into the pecan crumble on top with the soft sweet apple on the inside * chefs kiss*
Makes approx 18-24 units (depending on the size you like your muffins)
Batter
2 1/4 cups AP flour
1 ½ cups dark brown sugar
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon Kafe Hawaij or Ras El Hanout
1 large egg
1 cup buttermilk (or 1 cup of milk with a teaspoon of vinegar as a replacement)
125g soft butter (1 stick butter plus 2 teaspoons)
3 cups apples, peeled and cut to cubes *
Crumble Topping
½ cup brown sugar
2 tablespoons soft butter
⅓ cup AP flour
½ cup pecans, chopped coarsely
Pinch of salt
1 teaspoon Kafe Hawaij
For the batter,
Using the paddle attachment on your mixer, mix the sugar and butter till light and fluffy.
Add the egg and buttermilk followed by slowly adding the dry ingredients. Once batter comes together add the apples by folding them in with a spatula.
Line muffin tins with baking cups or grease well with cooking spray. Scoop mixture into the muffin pan and top with the crumble. Bake for 25 minutes in 350F preheated oven.
For the crumble;
In a medium size bowl place all the ingredients besides the pecans and pinch the mixture with your hands until crumbles are forming. Add the pecans and mix together.
Use your preferred baking apple. I had a variety of apples; from sweet to sour and I love the final outcome so don't be afraid to mix it up and use up what you have on hand.
